Thank you for your interest in our Single-Barrel program. We’re David, Jack and Peter Baker, brothers and co-partners of Litchfield Distillery. Since 2014, we’ve been hard at work crafting award-winning spirits with international acclaim. We’ve been named “CT Distillery of the Year” seven years running by the NY International Spirits Competition and our CT-Grown spirits continue to earn gold medals at top spirit competitions.

Our barrel program is available to retailers, restaurants, and bourbon clubs. You can even get a private group of friends together and purchase a cask! We’ve shipped barrels throughout Connecticut and as far away as California and Texas, with rave reviews. Why Litchfield Distillery?

  • Our bourbon and rye whiskey are distilled from Connecticut-grown grains. Our New England climate and mineral-rich terroir produce luscious, sweet corn, spicy rye and nutty malted barley.
  • Bourbon Whiskey Mash Bill: 70% corn, 25% rye, 5% malted barley. Straight Rye Whiskey Mash Bill: 70% winter rye, 30% malted barley.
  • We practice slow distillation, which enables us to create precise separation of different components during distillation to make clean cuts and respect the temperature during the gathering of the distillates.
  • Our spirits are non-chilled filtered to deliver a more robust flavor profile, exceptional aroma and a smoother finish.
  • When it comes to sustainability, we walk the talk. We generate nearly 100% of our electricity from 174 solar panels installed on the distillery roof. All our spent mash returns to farms for livestock feed. Retired bourbon barrels get re-purposed for finishing projects with local breweries, wineries and coffee roasters.

Straight Bourbon Whiskey

DOUBLE GOLD Medal, NYISC 2022

Nose: Hints of vanilla and caramel are complemented by a nice balance of apple, cinnamon
and baking bread.

Palate: Spicy and a little sweet with nice notes of rich tobacco and toasted baking spice; a hint of apple.

Finish: Full mouth feel with heat in the back palate. Very long, spicy finish with a hint of citrus.

Straight Bourbon Whiskey - Cask Strength

Bottled at 4 years. 120-125 Proof

GOLD Medal, NYISC 2022

Nose: Pleasing notes of caramel, butterscotch and vanilla with a hint of apple.

Palate: Lingering caramel and vanilla along with some pepper and cinnamon. A hint of fruity pear notes.

Finish: Strong, long, high-proof finish that ends smooth with a touch of spice.

Straight Rye Whiskey

Nose: Prominent rye and cereal followed by black cherry and baking spice.

Palate: Rye toast, candied cherry and clove with spicy pepper notes that are more reminiscent of jalapeños than black pepper.

Finish: Medium-to-long finish with spicy white pepper lingering on the top of the tongue and roof of the mouth followed by a slight honey-mint conclusion.

Port Cask Finish bourbon Whiskey

DOUBLE-PLATINUM Medal, ASCOT 2021

Nose: A vibrant red wine aroma with subtle dark fruit and blueberry pie along with slight cereal notes.

Palate: Black pepper, cinnamon, stone fruit and oak, all well-balanced and very smooth.

Finish: Medium-to-long finish with notes of golden raisins, dried straw and a touch of spice.

Limited Special Finishes

If you’re a fan of unique barrel-finished bourbons, inquire to see what we have coming of age. Recent cask finish releases include: Rum, Sherry, Calvados, and Madeira. Currently, we are finishing barrels with Rum, Sherry, Cabernet Sauvignon and Sauternes casks. We generally finish our 4-year Bourbon Whiskey but can discuss custom finishing projects upon request.
